TYPICAL FOOD of the DOLOMITES
KNODEL
The famous bread gnocchi with a thousand variations. They can be eaten in broth or dry with melted butter and cheeses. Our favorites are those with speck or puzzone di Moena (an exquisite Trentino cheese!). perfect for warming up cold winter evenings. How to prepare this recipe at home? Click Here
SPÄTZLE
The green dumplings (but they can also be white) typical of Tyrolean cuisine and simply composed of flour, eggs, water and spinach (for the green version). Topped with cream and speck. Marco's favorite dish, his grandmother made delicious ones! If you want to make them at home, you will need the typical spätzlehobel, a kind of grater that drops the dumplings directly into boiling water. How to prepare this recipe at home? Click Here
POTATO TORTEL with SPECK
A crunchy potato "pancake" accompanied by trays full of cold cuts and cheeses and a nice bowl of cabbage salad. To taste the originals you have to go to Val di Non, the homeland of Tortel. This is Simone's favorite dish! How to prepare this recipe at home? Click Here
POLENTA & MELTED CHEESE
Polenta is a must in a mountain menu, accompanied by melted cheese that varies from place to place: Schiz in the Belluno area, Tosella in Trentino and so on. What's better than a nice plate of steaming polenta and cheese, perhaps in the heat of a refuge? How to prepare this recipe at home? Click Here
TIROLER GRÖSTL
Sautéed receipe with eggs, potatoes and speck. Usually served directly in the pan and accompanied by a good beer, it is our favorite dish when we are in the refuge. How to prepare this recipe at home? Click Here
PORK SHANK with BAKED POTATOES
A very full-bodied winter dish typical of the mountain areas of the Dolomites that underlines the proximity of this cuisine to the German and Austrian ones. Served with baked potatoes it has an extra magical touch. How to prepare this recipe at home? Click Here
APPLE STRUDEL
We cannot talk about the Dolomites without mentioning the king of mountain desserts, the apple strudel with pine nuts, raisins and cinnamon. For the dough, everyone has their own recipe: puff pastry, shortcrust pastry or strudel dough, the thin dough typical of strudel. How to prepare this recipe at home? Click Here
